Lemon Coconut Cake



A recipe from my mum, this moist lemon and coconut cake is so easy and always turns out perfectly!

Ingredients
125g butter
1 cup sugar
3 eggs
1 tablespoon lemon juice
3/4 cup milk
1 2/3 cup self-raising flour
1/2 cup desiccated coconut
1 teaspoon finely grated lemon rind

Method
Grease 20cm round tin.  Heat oven to 180 degrees celsius.  Put ingredients in a bowl in order given.  Beat well.  Pour into tin and bake about 40 mins.

Hi Glenda, how did you go with it?!? I usually just do a lemon icing - 1.5 cups icing sugar mixed with some lemon juice - easy and yum!

I made a double batch of this the other day as muffins. It was a hit! My husband said, "yum! You can make those again!" And I love recipes that are super easy and don't make too much washing up; perfect for time-poor mamas. This is going to be a staple in our house from now on!
I used lime zest as I didn't have lemons, by the way. Really good.

This cake is sooooo good - I substituted coconut cream for the milk for extra flavour and because the b'day boy is lactose intolerant. Will def make this one again!!!
